It’s not only our last week in the Copy Kitchen, but it’s also our last week of classes as undergraduate students, which has us feeling a little nostalgic for simpler times.
That dietary restrictive time of year is upon us again. No, not swimsuit season … Passover! We know that this week can get monotonous if you’re not creative, and while neither of us is keeping Passover, we thought we would do a special article to help mix up the usual offerings.
If we know one thing, it’s cupcakes. On any given day, there is a 30 percent chance that we are driving to pick up a few of the perfect-for-one treats or a 100 percent chance that we are dreaming about doing so. After all, what could be more fun and delicious, or bring you more joy, than a cupcake? Not much.
We have to be honest with you—our patience has been wearing thin here in the Copy Kitchen. We’ve been eagerly awaiting spring break, all the while struggling through midterm exams, projects, presentations and papers. What could be better to combat the panic attacks than easy, inexpensive comfort food? Well, sleep…but that’s a commodity you’ll be hard-pressed to get.
This week we were feeling a little lethargic. The ups and downs of winter-spring will do that to a person. It’s no surprise, then, that we decided to keep things simple in the Cooking with Copy kitchen. Thankfully, simple can also mean super delicious. Enter bread. We’re really into bread. Seriously.

We’re sure you’ve visited Boosters Cafe and eaten the legendary pumpkin chocolate chip pancakes, unless you’re a pumpkin purist and order the batch sans chocolate.
